Rainbow Quinoa Pilaf

-Simple prep, full of flavor, our quinoa pilaf works well as a side dish or salad for your next- dinner.
1 cup Quinoa, rinsed
2 cups Water
1 Bell Pepper, diced
½ Red onion, diced
2 Ribs Celery, diced
1 medium yellow squash, grated
1 medium carrot, grated
½ cup Red Wine Vinegar
¼ cup Extra Virgin Olive Oil
Salt and Pepper to taste
Directions:
- Bring water and quinoa to a boil. Reduce heat to a simmer, and cover until water has cooked out completely. Let cool in refrigerator at least15 minutes.
- Toss cooled quinoa with diced pepper, onion, celery, and carrots vinegar, and oil, salt and pepper and enjoy.
