Nacho Cheese Sauce

1/2 cup raw cashews, drained after soaking in warm water for 30 minutes first
1 tablespoon tahini
1 red bell pepper, roast over a flame on the kitchen gas burner until black in some places
¼ cup nutritional yeast
1 tablespoon Braggs
Juice of ½ a lemon
¼ cup water
Combine the cashews, tahini, roasted red pepper, nutritional yeast, soy sauce, lemon juice and water in the Vitamix until smooth. Pour over chips or add to a burrito bowl, tacos or fajitas with avocado, brown rice, black beans, cilantro and salsa. Yum!
fast and easy, tried this for dinner tonight, yum!
