Coconut Soup

Ingredients:
2 Tbsp grated fresh ginger
4 cups vegetable broth
3 cans coconut milk
1/2 lb fresh or dried shiitake mushrooms, sliced
1 lb sweet potatoes
1 cauliflower, chopped
1 Tbsp cumin, ground
1 Tbsp fresh garlic, minced
3 Tbsp soy sauce or bragg’s amino acids
2 Tbsp fresh lime juice
1 bunch cilantro
salt to taste
1 lb marinated tofu (optional)
*For a kick or if you’re sick add cayenne pepper to taste (optional)
Directions:
1. Add broth and coconut milk into a large pot
2. Wait until low boil and add veggies and spices
3. Once cooked add lime juice and bragg’s amino acids
