RAINBOW SLAW W/CHERRIES, FETA & CITRUS VINAIGRETTE

3 medium carrots

½ head green cabbage
1 Fuji apple
3 broccoli stalks
1 cup dried tart cherries
½ cup chopped parsley
½ cup  goat feta cheese

Dressing: Juice & zest of 1 lemon, 1 orange, ¼ cup extra virgin olive oil, salt and pepper
Directions: Grate 1st 4 ingredients, toss with dressing, parsley, and cherries, and top with feta.
